Preparation and Cooking Time
Prep Time:10 minutes
Cook Time:15 minutes
Total Time: 25 minutes
Servings: 8
Ingredients
4 teaspoons baking powder
1 teaspoon salt
2 cups all-purpose flour
2 large eggs, beaten
4 tablespoons butter, melted
4 tablespoons white granulated sugar
2 cups milk
fresh berries and honey, for serving(optional)
Equipment
Griddle
Whisk
Directions
Step 1
In a large bowl, whisk together flour, sugar, salt, and baking powder.
Step 2
Make a hole in the middle and pour in milk, egg, and butter. Stir until smooth and well combined(do not overmix).
Step 3
Heat a lightly oiled skillet or griddle over medium-low heat. Use a ¼ cup to scoop the batter onto the griddle.
Step 4
Cook for about 1-2 minutes, or until the edges are dry and bubbles start to form. Then flip and cook until browned on the other side. Carry out the same process on the remaining batter.
Step 5
Serve with fresh berries and honey if desired.
Recipe Notes
1. Try not to overmix the batter. Overmixing the batter results in a tough, and dense dough, thereby making the pancakes seem rubbery.
2. Cook the pancakes slowly on medium-low heat, so they cook through and don’t get burnt in the middle.
3. Ensure that the pancakes are well cooked before flipping them on the griddle or skillet.
