Chicken Salad Sandwich with Cucumber, Red Bell Pepper, Tomato, and Lettuce on Whole Wheat Bread

Classic chicken salad sandwich is perfect for picnics, potlucks, or barbecues. Super easy to make and can be easily customized to your preference. They are always a hit for a quick and delicious lunch or dinner.

Ingredients

¼ teaspoon onion powder

⅓ cup mayonnaise

¼ cup red bell peppers, diced

¼ cup cucumber, diced

⅛ teaspoon ground black pepper

1½ cups cooked chicken, finely chopped

½ tablespoon fresh lemon juice

¼ teaspoon sea salt

6 slices whole wheat bread

1 tablespoon fresh parsley leaves, minced

Toppings(optional)

sliced tomatoes

lettuce


Directions

Step 1

In a mixing bowl, combine chicken, mayonnaise, parsley, red bell pepper, cucumber, onion powder, ground black pepper, sea salt, and lemon juice.


Step 2

Taste and adjust the seasoning with extra pepper and salt if you like. Place the lettuce leaves and sliced tomatoes on 3 slices of bread and top each with the filling. Then close the sandwiches with the reserved 3 slices of bread.


Recipe Notes

1. I used cooked chicken for this recipe but you can also use leftover chicken or rotisserie chicken.

2. The sandwich can be stored in the fridge in an airtight container for about 3-4 days.
