Preparation and Cooking Time
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
½ medium head green cabbage, cored and chopped
1 small yellow onion, diced
¼ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon light brown sugar
2 slices thick bacon, cut into ½ inch pieces
freshly chopped parsley, to serve
Cook bacon in a large cast iron skillet for at least 5 minutes or until crisp. Remove the bacon with a slotted spoon and place it on a plate lined with a paper towel (leaving the liquid in the skillet).
Add the onion to the skillet and stir. Increase the heat to medium-high and cook for 2-3 minutes or until translucent.
Add the brown sugar and cabbage. then add ground black pepper and salt, and cook, stirring from time to time for 5 minutes or until the cabbage becomes soft.
Put back the bacon in the skillet and toss to combine. Cook for about 1-2 minutes, then top with the freshly chopped parsley.
I used bacon for this recipe, however, you can replace the bacon with sausage. You can also use red cabbage for this recipe if you like.
